Week of food-Lunch

Sherrie over at Frenchy Finds is hosting a week of food this week and today is lunch! This is a lunch the kids and I have once a week. It is so versatile and you can eat it so many different ways.

tuna lunch
Tuna Salad
1 can of tuna drained
1/2 can of chick peas rinsed and drained
1/4 cup minced red onion
3 dill pickles chopped
1 carrot grated
1 tbsp mayonnaise
1 tbsp of yogurt (or yesterday I used Renne's yogurt/dill dressing.. yum!!)
1/2 juice of 1 lemon

Mix together and serve over spinach leaves, with rice crackers, with pasta or even on bread!

This looks delicious..I'm pretty sure this will be on our lunch menu this week! I'm so enjoying this week of food...I've written everyone's recipes down. If I had known Earlier I would have added my name...it looks like fun!

That looks and sounds really good. I never thought about substituting some yogurt for the mayo. Really good idea.

not only does this photo make me want to eat it no matter what the ingredients are ... once I read the ingredients I was sold!

If you'd like another variation, just add some good quality curry to the yoghurt. Or, something I learned years ago was to "thai" it up by adding about a tsp of peanut butter, a drop or two of soya sauce, and sub the pickles with toasted sunflower seeds. No kidding, it's fantastic. :)

i am enjoying your food so much ..i am participating "around the table" ...my other blog I thought that made sense take comfort
