My recipe today is for homemade granola. I just made up this recipe this weekend. I really LOVE the Nature's Path Pumpkin Flax granola, but it is such a small box. And it's pretty expensive so I looked at the ingredients and came up with my own version.

2.5 cups of rolled oats
1 cup of brown rice crispies (Nature's path makes this or you could just use regular rice crispies)
1 cup of unsweetened shredded coconut
1 cup of raw pumpkin seeds
.5 cup of flax seeds
pinch of sea salt
1 tsp of cinnamon
1/4 cup of brown sugar ( I used organic cane sugar)
1/4 cup of maple syrup or honey
1/4 cup of oil (I used Presidents Choice Omega oil, which is a mix of grapeseed, olive and flax, but any veg oil would work)

Mix together well and spread out evenly over two baking sheets. Bake at 350 for 30 minutes turning every 10 minutes to prevent it from burning. Remove from oven let it cool and store in an air tight container. The parfaits in the pictures are layers of plain yogurt, fresh berries and granola. yum!!!

I have been looking for a good granola recipe and I think this is it! I am definately going to buy the ingredients when my husband gets paid on friday!LOL!

Mmmm we love that Nature's Path granola too. Costco sells huge boxes of it for $8 here...just thought I would mention that in case you had a Costco near you and shopped there.
I love making my own granola! So yummy, and you can easily add anything you want to switch it up!
