Week of food `Dinner`

Before I get on with recipe I have to mention that I have sold 7 prints!!!! Yeah!!! Thanks so much for your support!
Split Pea Soup with Sausage.
1.5 cups of dried green split peas rinsed
1 quart of chicken stock
3 cups of water
1 onion chopped
2 carrots diced
2 stalks of celery diced
1 pound of sausage sliced (I use chicken)
salt and pepper to taste
lime juice
In a heavy bottomed pot add the split peas and cover with water, bring to a boil and simmer for about 30 minutes, add more water if needed.
In a large dutch oven heat some olive oil and add the onions, carrots and celery and cook for a few minutes, then add the sausage. Cook until the sausage is browned. Add the chicken stock, water and cooked split peas. Simmer for another 20-30 minutes and add salt and pepper to taste (don't add the salt until the end of cooking as it can toughen the skin on the peas) Add a good squeeze of fresh lime juice to each bowl before serving!

I think the one thing I missed the most when I stopped eating meat was sausage. But I get them local and homemade with venison whenever I can find it, which is not often.

That soup looks scrumptions and in all the years I've been cooking it, I never thought to use chicken stock. D'oh! I'm going to try your recipe. The fog here is as thick as pea soup, so the weather is appropriate! =)
You should think about gathering a portfolio of food images and contacting local restaurants about doing food pictures for any advertising they may plan to do. Who knows?
