I wanted to share a few recipes here with you guys that we have been enjoying lately! The first is German Apple Pancake. It is originally a Martha Stewart recipe but I have changed it a fair bit to make it more healthy.
-In a large cast iron skillet melt 2 tablespoons of butter. Add 1/4 cup of brown sugar, 1 teaspoon of cinnamon, few shakes of nutmeg, shake of cloves and 2 diced green apples
-Saute for 10 minutes
-Pour batter over caramelized apples and bake at 400 degrees for 20 minutes.
Batter:
-4 tablespoons of melted butter
-2 tablespoons of plain yogurt
-2 eggs
-1 1/2 cups of whole milk
-1 1/2 cups of whole wheat flour
- 1/2 tsp salt
- 1 tsp baking powder
-1/4 cup sugar
Mix all ingredients until smooth.
Here is the nutritional breakdown for this. It makes 6 servings so this is per serving.

The second is a greek inspired couscous salad (you can also use quinoa instead of couscous, it's very similar and healthier.
Greek Inspired Couscous Salad
1/2 cup of couscous or quinoa (cooked according to package directions in water)

dressing
2 tablespoons of olive oil
juice of 1 lemon
1 clove of garlic minced


In a large bowl mix together the dressing, add in the following
1 red onion chopped
7 large green olives sliced
5 chopped sun dried tomatoes
3 chopped jarred artichoke hearts
1 large cucumber diced
1/4 feta cheese crumbled
3/4 cup canned chick peas
then add the cooled couscous or quinoa and chill for about an hour.

Here is the nutritional info on this recipe which makes 5 servings. This is great with bbq chicken or turkey sausage or a chicken breast.

I have only made couscous once before and it did not turn out so well. This looks so yummy.

I'm going to make the Greek salad. Now, I just can't decide if I should use cous cous or quinoa! Looks like a win-win situation! Thanks for sharing these!

These both look so good, well with the exception of the olives - I can't do olives. =) I've just spent about the last hour on the NutritionData.com website. That is so cool that you can generate Nutrition Facts labels.
