Lentil Soup


Lentil Soup Recipe  
2 tbsp olive oil 
1 onion chopped 
2 stalks of celery chopped 
3 cloves garlic minced 
1 can of tomato paste 
1 cup green lentils 
1 cup water 
1 quart of veggie or chicken stock 
fresh thyme  
salt and pepper to taste  

In a large dutch oven heat olive oil over medium heat and add onions and celery. Cook until golden then add the garlic. After about 1 minute add the tomato paste. Then add the lentils, water and broth. Add a few springs of fresh thyme stems (just throw them in whole and pick out the stems later). Cover and cook for about 40 minutes or until the lentils are soft. You may need to add more water if you like it less thick. Taste and add salt and pepper if needed. Enjoy!

i was just talking about home made soup. yesterday for family day my family and i went over to my grandparents house for a visit and dinner. we had home made roasted red pepper soup..it was amazing! i'm going to pass this recipe on to my nanny. maybe she will make some for me next time :)
