Comfort week~Food

Well this is no brainer :) Soup of course is my ultimate comfort food and lucky for me I am making soup every week. This week it is one our favourites. Affectionately called "green" soup by my kids. It's really "cream" of broccoli soup. Although I sometimes use asparagus which is also amazing! The cream part of the soup comes from cashews which get blended into a "milk" and give the soup a really creamy almost parmesan flavour. So good!
"Cream" of Broccoli Soup
1 onion diced
3 cloves of garlic minced
1 potato peeled and diced
1 head of broccoli chopped
1 quart of chicken or vegetable stock
1/2 cup cashews
1 cup water
salt and pepper to taste
In a large dutch oven heat some olive oil and saute onions until translucent. Add in garlic and cook a few minutes. Be careful not to burn. Add in the potatoes, broccoli and stock. Bring to a simmer and cook covered until all the veggies are soft. In a blender add the cashews and water and blend on high until smooth. Pour into the dutch oven and either use an immersion blender or a regular blender and blend until smooth (leave some lumps if your children will allow it :) Add salt and pepper to taste. Enjoy with bread of any kind!! yum!

soup....who would think it could be so rich and bright?
...wish I was going to be home this week to participate in this but I will be enjoying watching from afar...Soup is THE comfort food...the cashews in this soup is a very interesting twist which I will definitly try - always looking for ideas for my vegetarian children!
"Milk" from blended cashews. What a fantastic idea. I will be trying that one for sure. Our favorite soup is pumpkin and sweet corn and I think the cashew idea would work well in that too!
I LOVE soup too. Nothing like it for comfort on a cold, wet, grey day... And this one sounds yummy!

mmmm, yum! I love cooking with nuts/nutmilks! I should duoble this up and give it a go.

This is the most unique cream of broccoli soup recipe I've ever seen! I'll have to convince dh to make it. :)
